My kid is usually pretty good about eating veggies, but a lot of his friends aren't. When they stay over for dinner, I really hate to switch out our typical menus, partially because I don't want to give my son the wrong idea. I found, though, that this dish works for the most veggie-hatin' kid.
Make pasta the normal way, drain, return to pot. Toss for 5 minutes with broccoli, chopped tomatoes, marinated pepper strips (adds the tanginess) and - this is the kid-winning part - Italian dressing. You can add other vegetables there, too, of course - I usually just grab whatever I've got on hand.
